After a long weekend of showing homes around Forney, Rockwall, Heath and Dallas there is nothing our family looks forward to more than a good meal with everyone around the dinner table. Here in North Texas we have been blessed with some incredible weather this weekend..so slaving over a hot stove just is not going to cut it!

With that as the requirement for dinner and a large group of family and friends- the natural selection is Spaghetti Meatballs Italian Bread and a great big Salad! What could be easier and more satisfying!!

I am about to try a new meatball recipe, not that I dislike my old recipe, but as I said slaving over the stove was not in today’s plans so this new one is a no fry- no bake recipe…you just put them in the sauce and walk away!!! Now that is cooking that speaks to me!!

So it is pretty basic- Ground Beef/ Ground Pork..Mix it up with hands til thouroughly mixed. Meanwhile in separate bowl take 3-4 slices of good italian bread, remove any crusts and put it in the bowl covered with about 3/4 cup of milk. Let sit and soak.

When they are thouroughly soaked you will want to add to the meat mixture- in small, squeezed out bits, and mix thouroughly.

Have a bowl with 1/2-1 cup of flour set aside. Now add to the meat mixture all your wanted ingredients- here is where you can personalize it..but the basics are two eggs, 2-3 cloves garlic, parmesan(1/4-1/2 cup) and 1-2T chopped parsley. If you want to add in additional flavors- go for it- this is your meatball- your signature!! Salt and Pepper to taste.

Put on about 40oz of sauce to simmer..homemade (if you have it) or 2-3 jars of your preferred sauce….

Now begin rolling- you want meatballs about 1- 1 1/2 inches- roll them with your hands then roll in the flour to lightly coat and finally drop them into the simmering sauce.

Cover- Simmer- about 5-7 minutes without disturbing. Now Pull off cover, STIR, replace cover and let gently simmer until pink is gone from center of meatballs- about 35-40 minutes. Finally uncover and let simmer for about 5 minutes more to allow sauce to thicken.

Serve over spaghetti with a side salad and enjoy!!!
