Many many nights there is no time for dinner- and I DREAD FAST FOOD!!!  And if I had one more of my husband’s French Fries and Corn Dog nights I was going to scream- Necessity is the mother of invention- and thus I came up with a few pull together meals that I can get on the table in about 20 minutes!!

25 minutes is quick enough that when the kids say ‘When’s dinner?”  I can tell one of those parenthood white lies and say ‘In a few minutes…” and they won’t notice!!  (I have done some very unscientific research on this and the threshold is about 36 minutes….at 36 minutes they no longer want to wait and I see the cupboard doors opening and people congregating in front of the open doors of the fridge looking for ANYTHING to nibble on!!)  And thus the 25 minute stopwatch!

Ok so here goes-

First is to have a plan- (the food is the easy part) if you have kids the tough part is divert and distract!!!  Remind them to go pick up their room and finish homework or get the garbage out (N.B- you don’t actually expect these items to get done- if they do BONUS!!!- but the main goal here is to keep them out of the kitchen and proximity to junk food and snacks and get them to avoid you in the kitchen so you can throw this food together and get it on the table!!)

Second– Get the rice going- In our house it is simple 1 cup rice and 2 cups water some salt in water and maybe a small pat of butter/margarine or olive oil- I have a pan I use specifically for the rice ready to go at all times- get it on the stove – boils in minutes and is fully ready in 20 minutes!  (if you are a real health consious soul- and you can do BROWN RICE- GOD BLESS- and send me hints- I fail at brown rice unless it is boil in bag version!)

Third– either chicken breast or tenderloins or beef- whatever you have handy- you will be cutting it up into very small pieces- and throwing into a skillet hot with a Tablespoon of oil in it- this is the cooking phase- and if you have chopped your main ingredient into small very bite size pieces it will cook quickly.

Fourth- while that is cooking cut your broccoli (and any other veggie you want to add) into small pieces- once the meat is cooked you will place this on top- and cover with a lid for a minute or two- to essentailly steam cook it!

Fifth– Throw together your stir fry sauce- No NEED for fancy sauces filled with chemicals, salt and $$$$.  Just use what you have and it is so simple!  Here is my go to sauce:

  • 2 cloves garlic crushed
  • 1/3 cup soy sauce (use low salt)
  • 2 T brown sugar
  • 1 teaspoon ginger
  • 1 teaspoon cornstarch
  • Mix all of above with 1/4 Cup water
  • (For added heat you can add a pinch of red pepper)

At about 15-16 minutes of cooking the meat choice add in the veggie- steam- then add in the sauce- raise heat for a minute- mix it in- set to low- wait for rice to finish and


****Try the recipe in this portion size first see how it goes- and if they like it I totally suggest doubling everything- start with 2-3 lbs of meat and go from there!!!!  That way you will get some- otherwise you will learn like I did- the kids gobble it up and you are left with a quick salad for dinner!!  😦
